A creamy and indulgent cheesecake made with sweet dates, perfect for any occasion. A delightful fusion of creamy texture and natural sweetness.
INGREDIENTS
Crust:
1 ½ cups graham cracker crumbs
½ cup Sultan brand butter, melted
2 tbsp brown sugar
Filling:
16 oz cream cheese, softened
½ cup granulated sugar
¼ cup Sultan brand honey
3 large eggs
1 tsp vanilla extract
1 cup Medjool dates, pitted and chopped
Topping:
1 cup heavy cream
2 tbsp powdered sugar
1 tsp vanilla extract
¼ cup Medjool dates, finely chopped
Directions
Step 1
Preheat oven to 325°F (165°C). In a medium bowl, mix graham cracker crumbs, melted butter, and brown sugar until well combined. Press mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
Step 2
In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and honey, mixing well. Add eggs one at a time, blending after each addition. Stir in vanilla extract and chopped dates until evenly incorporated.
Step 3
Pour the cream cheese mixture over the cooled crust. Smooth the top with a spatula. Bake for 50–60 minutes, or until the center is just set and slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
Step 4
After cooling in the oven, refrigerate the cheesecake for at least 4 hours or overnight.
Step 5
For the topping, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in finely chopped dates. Spread the whipped cream mixture over the cooled cheesecake just before serving.
Step 6
Slice and serve! Enjoy your Date Cheesecake, topped with extra dates if desired.
